Our herd genetics is predominantly Angus with some Simmental and Limousine. In addition to marbling these other two breeds have larger frames for muscle development and are naturally more disease resistant. Our current herd size is 120 cow/calf pairs with 4 herd sires (Bulls). All of the bulls are registered Angus with defined traits such as marbling. This is known from a simple blood test taken during yearly Veterinarian visits.
We take care of our cattle and they are always treated humanely. We have never considered growth hormones or antibiotics because those things are not required or wanted in our herds or finishing system. Shortly after being weaned we section off our yearlings into their own pasture and begin feeding them corn and soy-meal to slowly increase marbling and add the flavor. They drink from the ranch springs and enjoy the freedom of their pasture. As they age the grain allocation is increased to enhance the marbling and taste.
The last steps for better tasting beef are stress reduction and beef aging. The processing facilities are short distances from the ranch so long trailer rides are eliminated. Beef is allowed to hang in coolers for a minimum of 10 days to add flavor and increase tenderness. Customers can request additional aging days.
