Beef orders are taken by reservation for quarters, sides or whole beef. Orders are filled based on availability. With a cow/calf herd of 120 our finished beef will be available most of the year but there will be gaps. Contact us to better understand the next finished dates and waiting list. If you choose to continue you will be put on a list and you will have the option to purchase beef when your name pops to the top. All beef is vacuum packed, labeled and frozen. On orders for whole and sides you will work with the processing facility to determine the cuts you prefer. Standard cuts will be used for quarters.
The larger the package the more your will save over store purchased Certified Angus beef. A whole beef will cost about 10% to 25% below store prices. A whole beef contains about 210 lbs of hamburger and 210 lbs of steaks, roasts and brisket with average cost of $6.20/lb. Check this price against cuts at your local grocery store. Where Certified Angus is sold, hamburger costs between $5.50 to $7.00/lb, steaks $12 to $15/lb and roasts $6 to $9/lb. Splitting a whole beef between friends and family will save you hundreds compared to store purchased beef.
The “Rail Weight” cost for a whole processed beef is $3.00 lb, plus processing fees. Total cost will be approximately $2,600. Deposit = $300
Standard cuts usually include the following but can be modified.
Option 2: The “Rail Weight” cost for a side of processed beef is $3.05 lb, plus processing fees. Total cost will be approximately $1330. Deposit = $150.
Option 3: The “Rail Weight” cost for a quarter of processed beef is $3.10 lb, plus processing fees. Total cost will be approximately $675. Deposit = $80.
Both whole and side orders will be picked up at a selected processing facility by the buyer. Processing facilities are currently located in the southern counties of the St. Louis area near Potosi and Farmington but new locations will be added based on demand from an area. We will attempt to select a facility that is closest to your location. Smaller orders for quarters can be delivered free of charge if someone is available to accept the order and the delivery is along a route basically west and south of I-270. Contact us with your location so we can determine if we can fit you into our free deliverer route.
A 4 to 5 cubic ft chest freezer that holds between 85 and 110 pounds of food will be suitable for a 1/4 beef (depends on final cuts). Therefore, a side of beef will fit in an 8 to10 cubic ft chest freezer. While a whole cow will fit in a 16 to 20 cubic ft freezer.
